When the temperature outside starts to rise, there’s nothing like a tasty, cold treat. I had a friend recently give me a fudgesicle from a recipe she’d just tried out. The recipe she used called for using avocado. I have to say, I was hooked. It had such a creamy consistency and was really yummy! I found a similar recipe online, and tweaked to my own tastes. I’m really pleased with how they turned out.
Lots of Cream But No Dairy
What I love about these fudgesicles is that they are dairy-free. If you suffer from allergies or have trouble digesting dairy, finding dairy-free options are a must. It can be difficult, however, to find options that have that creamy consistency and are also delicious. These fudgesicles have a terrific creamy texture and taste great, too!
Packed With Nutrition
If you are afraid of using avocado, don’t be! You don’t taste the avocado at all! Avocados are so incredibly nutritious and full of vitamins, minerals and healthy fats. I also added a little molasses to boost the mineral content. For those concerned about refined sugar, there are no worries here. These treats are sweetened naturally with dates and maple syrup. Maple syrup is also high in minerals, especially manganese.
I wasn’t sure how my kids would like these fudgesicles, but as it turns out, they love them!
Here’s the recipe!
- 2 ripe avocados
- 8 dates (pitted and soaked in warm water for at least 30 minutes prior to making)
- pinch of salt
- 1 tsp of molasses
- 1/2 tsp of vanilla
- 1 cup of coconut milk
- 3/4 cup of water
- 4 tbs of maple syrup
- Optional: chocolate chips
- Add all the ingredients to a food processor or blender and blend until smooth. Pour into popsicle molds (find them here) and freeze.
