I’m always on the lookout for healthy treats for my kids. Kids, just like adults, get bored with the same foods so I try to keep different items in the rotation. Plus, providing one’s body with a variety of different foods is better nutritionally. My kids’ school snacks will often consist of veggie slices with a dip or cut up fruit, dried seaweed, pretzels and so forth. I do, however, like to provide them with little ‘treats’ sometimes that are fun and sweet but not too junkie. Here’s what I’ve given to them recently and they were a hit! Also, I discovered that not only kids like this treat. 😉
- 1 package mini rice cakes
- 1/2 dark chocolate bar
- Use a double boiler to melt down the dark chocolate. If you don't have a double boiler, you can use a pyrex dish or smaller pot that fits securely over another pot and melt the chocolate that way. Brush the melted chocolate onto the mini rice cakes and allow to cool. Store in a cool place.
I didn’t use the entire package of rice cakes but I would say that I made approximately 30 mini cakes. You can definitely add more rice cakes if you have more chocolate left over.
I like this treat because it’s just a little sweetness but goes well with the crunchiness of the rice cake. They’re also small and cute which is always fun for little ones (and, not so little ones ;))
